02 - Pour puree through fine-mesh sieve into large bowl, pressing with spoon to extract juice and remove pulp for smoother texture.
03 - Add sugar, lime juice, and salt to watermelon juice. Stir continuously until sugar completely dissolves.
04 - Transfer mixture to shallow freezer-safe dish and place in freezer for 30 minutes.
05 - Remove from freezer and stir vigorously with fork, scraping sides and bottom to break up forming ice crystals.
06 - Return to freezer and repeat stirring process every 30 minutes for approximately 3 hours until mixture reaches fluffy, scoopable consistency.
07 - Serve immediately for softer texture. For firmer sorbet, freeze longer and let sit at room temperature 5 minutes before scooping.
