01 - Preheat oven to 425°F.
02 - Toss fries with vegetable oil, paprika, garlic powder, onion powder, salt, and pepper. Spread in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway, until golden and crisp.
03 - Heat olive oil in a skillet over medium heat. Add ground beef and cook, breaking up with a spoon, until browned, about 5-7 minutes. Drain excess fat.
04 - Stir taco seasoning and water into beef. Simmer for 2-3 minutes until thickened. Remove from heat.
05 - Transfer baked fries to an oven-safe platter or keep on the baking sheet. Top evenly with taco beef, then sprinkle both cheeses over the top.
06 - Return to oven for 5-7 minutes until cheese is melted and bubbly.
07 - Remove from oven. Add tomatoes, black olives, jalapeños, green onions, and cilantro. Drizzle or dollop with sour cream.
08 - Serve immediately while hot.
