- Preheat the oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium heat, then sauté finely chopped onion and minced garlic for 2 to 3 minutes until softened.
- Add ground beef to the skillet and cook, breaking it apart with a spoon, until browned and fully cooked, about 5 to 6 minutes.
- Incorporate ground cumin, chili powder, smoked paprika, salt, and black pepper into the beef. Continue cooking for 2 minutes, then remove skillet from heat.
- Arrange tortilla chips evenly on a large baking tray or in an ovenproof dish.
- Distribute the cooked beef mixture evenly over the tortilla chips.
- Sprinkle grated cheddar and Monterey Jack cheeses over the beef, then scatter thinly sliced jalapenos, spring onions, and diced tomato evenly on top.
- Bake in the preheated oven for 8 to 10 minutes, or until the cheese has melted and is bubbly.
- Remove from the oven, optionally sprinkle with fresh chopped coriander, and serve immediately with sour cream, salsa, and guacamole.
